I love to make fresh fruit salsa, a little different twist to your regular tomato based salsas and just as versatile. Plus, it's a great way to incorporate a ton of nutrients into your meals and add LOTS of flavor. You can really get creative and use peaches, pineapple, mangoes, etc. You can make them mild or add more chilis and blow your mind. Besides, how often can you make a sauce that is good for you and calorie conscious? I made this one with mango and avocadoes to go over halibut done on the grill. Delish!
3 small champagne mangoes, diced
1-2 avocadoes(we used 2), diced
1/2 red onion, diced
2 TBS. chopped cilantro
2 limes, juiced
1/2 red bell pepper, diced
1-2 jalapenos, seeded and finely diced(you can omit this if you don't like them)
Combine all ingredients in a bowl and toss. Serve over fish, pork, chicken or with chips. Serves 4-6.
