Disappearing Salmon

Ok, raise your hand if your child won’t eat fish! I know it can be a struggle, but it doesn’t have to be. This marinade is a great way to get your kids to eat salmon and ask for more. Wild Caught salmon is an incredible source of Omega 3 fatty acids which is a must have for the developing brain. Marine source omega 3’s help prevent cancer, insulin resistance, depression, ADHD and the list goes on. The best reason to eat fish…it tastes good!

1 lb. wild caught salmon fillet
2 TBS. Creole mustard
1 garlic clove, minced
3 TBS. low sodium soy sauce
2 tsp. olive oil

In a bowl, combine all ingredients except for the salmon. Slather ¾ of the sauce on the fish, rubbing gently into the flesh to saturate. Let fish marinate on the counter for 20 min. While fish is marinating, preheat oven to 350. Bake fish skin side down until cooked through, about 25-30 min. Drizzle cooked fish with remaining sauce and serve. Wait for applause! Try grilling it for a slightly different flavor.
