Homemade Granola


I have always loved granola and most kids can't resist it, but often times it is LOADED with too much sugar. However, with a few modifications, granola can be a healthy whole grain snack chocked full of vitamins, minerals and good fats that will keep your little daredevils primed with energy. Plus, store bought granola is expensive and can contain additives that kids don't need!


2 1/2 C. Old Fashioned Oatmeal
1 C. unsweetened shredded coconut
1/4 C. raw sesame seeds
1/2 C. raw sunflower seeds
3/4 C. raw whole almonds
1/4 C. wheat germ
1/4 C. flaxmeal
4 TBS. unsalted butter
1/2 C. honey
1 tsp. pumpkin pie spice(cinnamon, cloves, ginger and nutmeg)
1 C. mixed no sugar added dried fruit pieces(or whatever dried fruit your child likes)
2 tsp. vanilla

Preheat oven to 300. On a 9X13 cookie sheet, combine oats, coconut, wheat germ, flax, sunflower and sesame seeds and almonds. Toast for 20 min. stirring occasionally. While the dry ingredients are toasting, combine honey, pumpkin pie spice and butter in a sauce pan and simmer on low. When pan comes out of the oven , pour dried fruit and vanilla into the sauce and stir to combine. Put toasted oats into a large bowl and pour honey mixture over the top. Stir to combine. Spray a glass 9X13 baking dish with non-stick cooking spray and dump in the granola. Press down evenly and return to the oven for 20 min. Remove and let cool. Keep in an airtight gallon ziplock or plastic container for up to one week. Makes about 6 cups.

You will NOT believe how delicious this is! Try it with a little milk for breakfast or on top of greek yogurt for a yummy snack.
